Easy Peasy Cheeseburger Pie


It was cold outside and a hamburger just didn’t appeal to me. However, I thanked him for his suggestion and went on my way to a meeting in town. As I drove I remembered seeing a picture of a cheeseburger pie rolling around the data banks in my head.

A quick google search (not while I was driving …) revealed a lot of cheeseburger pie recipes. I got really excited about the short list of ingredients needed and the wonderful reviews of those who have already made and eaten cheeseburger pie. I think I am only a millennium behind everyone else with this recipe. Have you made cheeseburger pie?

I chose a recipe from Betty Crocker website called “Impossibly Easy Cheeseburger Pie” and it is. Easy peasy. To say it was a “hit” is a complete understatement. We were wonderfully taken by surprise. The fragrance in the house as it baked had everyone’s attention!

We ate it alongside mixed vegetables and fried sweet potatoes. Ah, yum! The next time I make this pie (I hope it is soon) I will use half Pepperjack cheese and half cheddar cheese. I can already taste the awesome blend of flavors!

Btw- it snowed in Tennessee this weekend. Southerner’s get really excited about snow. Growing up in Nebraska and living in Colorado and Utah … I have seen enough snow. But a “snow day” I LOVE! No one can go anywhere. Icy roads keep us home and there is no expectation to do anything but make soup and bread and watch the snow fall. I did just that. Soup and bread recipes coming soon!

Easy Peasy Cheeseburger Pie

This impossibly easy meat pie blends the wonderful flavors of hamburger, onion and cheese. A family pleaser!

Recipe type: Main Dish
Serves: 6 servings
Ingredients
- 1 lb. lean ground beef
- 1 large onion chopped (at least 1 cup)
- ½ teaspoon salt
- 1½ cups shredded Cheddar cheese*
- ½ cup Bisquick mix
- 1¼ cups milk
- 2 eggs
Instructions
- Heat oven to 400 degrees F. Spray 9" glass pie plate with cooking spray.
- In a 10 inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate, sprinkle with cheese.
- In a small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour over the meat and cheese mixture.
- Bake about 25 minutes or until knife inserted in the center comes out clean.
Notes
*A mixture of cheeses will give depth of flavor. Suggest Pepperjack, Monterey Jack, or other favorites.
