Cornbread Waffles

80 years strong it was a great day yesterday when mom, Lee and I took to the links and golfed at Tim’s Ford State Park. The weather was a balmy 78 degrees and just perfect. 
Each week mom and I attend Community Bible Study. The ministry of Community Bible Study began as an answer to the heartfelt prayer of a group of women who prayed that the Lord would provide many effective Bible Studies for people in the Washington, D.C. area, this was in 1975. As a result of those prayers today Community Bible Study provides lessons and study in every state in the U.S.A. and to many countries around the world. In our area, as is the case around the world, the weekly teaching is done by trained volunteers and it is an outstanding program. Crispy Cornbread Waffles, Southern Style
2 cups Self-Rising Cornmeal Mix
1 1/3 cups milk or 1 3/4 buttermilk
1/4 cup oil (vegetable, canola, olive)
1 large egg
No-stick Cooking sprayBEAT egg in medium bowl.

STIR** in milk, oil, egg, and corn meal mix until smooth. Batter should be creamy and pourable. If too thick, add 1 to 2 tablespoons more milk.
**
HEAT**waffle iron. Spray with no-stick cooking spray.Pour approximately 1/2 cup batter onto hot sizzling waffle iron. Cook until brown, according to your waffle maker instructions. ** Your waffle iron may take more or less batter based on its size, just adjust accordingly.
Serve with butter.
Noteworthy:
- In the south, we put sugar in the tea and leave it out of the cornbread. My northern friends may want to add 1 or 2 teaspoons of sugar to the mixture:)
- A regular waffle iron or a Belgian waffle iron both work for this recipe, although I prefer the waffles made by the regular iron.
- At the table, I like to use spray I Can’t Believe Its Not Butter on the waffles because it coats them so evenly.
My waffle iron is the cutest little thing making five little hearts, but if yours isn’t quite as cute as mine, your waffles will still taste wonderful!
